<b>TASTING NOTES:</b><br /><br /> There is an old Italian saying that it takes five ingredients to create the ideal habitat for olive trees: sun, stone, drought, silence, and solitude. Ferrari-Carano's 2008 Mountain Estate Extra Virgin Olive Oil is a true reflection of the mountain terroir from where it originates. This particular olive oil is produced from five types of Italian olive trees: Frantoio, Leccino, Maurino, Moraioli and Pendolino. Our Olive Oil is unfiltered, resulting in a delicious, vibrant oil that is green-gold in color and fruity in flavor with a touch of spice.
<br /><br /><b>PROCESSING NOTES:</b><br /><br />Because olives do not ripen all at once, we hand-pick in the cold months of November and December to ensure quality. Just over 1,000 pounds of olives were transported to Sonoma's McEvoy Ranch, a leader in California's olive oil production, where the olives are stone milled using a twin-granite mill, then cold pressed. The olive oil is returned to Ferrari-Carano for storing and fining. Using gravity, the olive oil is racked twice over the course of three months to help remove any large olive matter.
<br /><br /><b>OLIVE OIL USES:</b><br /><br />Ferrari-Carano’s Extra Virgin Olive Oil may be used in endless ways in the kitchen, from appetizers and salads to main courses and desserts.
